Ingredients:

• 1 medium-sized pumpkin
• 1 cup water
• 1 tablespoon sugar
• 30 ml oil
• 1 medium onion
• 2 medium tomatoes
• Seasoning and Spices (such as salt, pepper, cumin, etc.)
• Parsley
• 25 gm butter

Method:

• 1. Remove the top layer of the pumpkin.
• 2. Cut the pumpkin into smaller pieces.
• 3. Place the pumpkin pieces in a pot and add water to cover them.
• 4. Cook the pumpkin until soft, without adding anything to the water.
• 5. Drain the water and crush the cooked pumpkin until soft.
• 6. Add a pinch of sugar to the crushed pumpkin and mix well.
• 7. In a separate saucepan, heat oil and sauté onions, tomatoes, and spices until fragrant.
• 8. Add the cooked pumpkin to the pan with onions, tomatoes, and spices, stirring thoroughly until everything is well blended.
• 9. Serve hot.
