Ingredients:

• 2 cups of full cream milk
• 250 gm onions
• 4 cloves garlic
• 50 gm Coriander fresh
• 25 gm parsley fresh
• 50 gm ginger
• 3 tablespoons flour
• 150 gm butter
• 1 teaspoon of black pepper
• 2 teaspoons of white pepper
• 10 ml paprika powder
• Rosemary (dried)
• 100 gm Gouda cheese
• 100 gm Cheddar cheese
• 15 ml Salt
• 50 gm cooking oil
• 400 gm Chorizo sausage
• 500 gm shrimp peeled or ( 1 x 800 gm unpeeled) 500 gm Spaghetti 2 tablespoons lemon juice
• 500 gm Spaghetti 2 tablespoons lemon juice
• 2 tablespoons lemon juice

Method:

Pasta (boiling)

• 1. Cook the pasta in a large pan of boiling salted water, stir to avoid it to stick together. Drain the pasta and add 25ml of oil to avoid stickiness.Cooking time (6-8) min.



Shrimp mixture

• 1.For the Shrimp sauce remove shrimps from sealed package into a bowl, rinse thoroughly twice then allow it to soak in water and add a spoon of lemon juice.
• 2. Meanwhile pasta is getting ready on medium heat, start chopping onions into finely diced cubes along with the ginger, garlic, coriander, chorizo and parsley.
• 3.Preheat medium pan with oil. Add mixture of onion, garlic, chorizo, coriander & ginger stir together and bring to a gentle simmer (5min) and set aside.
• 4.Pour out the shrimp water and fry shrimp in hot oil. Make sure to drain out all the water. Add one tablespoon of salt, pepper, dried rosemary & paprika. Stir fry for 5min on medium heat until golden brown but not dry.
• 5. For the white sauce melt butter in a pan with low heat, add two tablespoons of garlic,2 tablespoons of flour. Stir in the milk and then allow it to bubble for 2-3min as it thickens. Stir frequently to avoid lumps while adding Gouda and Cheddar cheese. Slowly turn down the heat and add a pinch of salt, pepper and paprika and cook until smooth and thick. (5 to 7min)
• 6. Make sure your pasta is not over cooked, strain out pasta water and keep 1 cup reserved as you can use it if the pasta looks too dry at the end. Add 1 tablespoon of oil to avoid stickiness after straining.
• 7. Add shrimp mixture, creamy white sauce mixture together with pasta and combine in one pan on low heat and cook for 5 minutes. Mix well to get all ingredients together then lay out into a casserole dish.
NB: If the pasta looks too dry, add some of the reserved pasta water until you reach the desired consistency.
